Our newest release from the L'Imparfait Collaboration with David McMillan. 

Macération is a blend of:

5 barrels of Savagnin - 21 days skin contact - spontaneous fermentation - 8 months in neutral barrels.

3 barrels of Chardonnay - whole cluster pressed - spontaneous ferment - barrel fermented - neutral barrels 

2 barrels of Gewurztraminer - 24 days skin contact - spontaneous fermentation- 8 months in neutral barrel

Drink: 2019-2021
Format: 750 ml

Alcool: 13%

Sweetness: Dry

Serving temperature: 7-11 degrees

Prince Edward County, in Niagara Peninsula.
